Leaves and Branches
Use the branches conservatively as they can give slightly woody flavors and are more spicy and camphor-like than the leaves. Three 12-inch branches are plenty for a 5-gallon batch. Break them up into pieces a few inches long before putting them into a bag and boiling for 60 minutes.
The leaves can be packed in for an orange-gin-pepper aroma. If adding fresh, break them apart slightly with your hands before putting them into a bag. Try using a quarter pound for a 5-gallon batch, added 10 minutes before the end of the boil. If adding dry, pulse them in a food processor before adding to a bag. Try ΒΌ pound for a 5-gallon batch.
